Amarone Della Valpolicella DOC, Santa Sofia 2012

Santa Sofia


A glass of Amarone in one of the bars located on Piazza Bra in Verona, before entering the Arena di Verona for a summer opera. That's where we first enjoyed a glass of this, deep ruby, almost impenetrable, with garnet reflections.

Production area
Valpolicella classica. From vineyards of mediocre rocky hills located in the towns of Negrar, Fumane, San Pietro in Cariano and Marano, north of Verona. 

Varieties
Corvina and Corvinone grapes (70%), Rondinella (30%), with grapes drainage for a period ranging from 90 to 120 days. 

Description
A delicate bouquet at the same time, refined hints of ripe cherries, dark currants, dried plums; You will notice soft memories of milk chocolate, sensations of rhubarb, balsamic notes of mentholed tobacco: a sophisticated, harmonious, elegant olfactory spectrum. The drink is toned, juicy, straight from a tannic texture, lively but yet enveloping and mature; The alcoholic heat is well balanced by a corroborating freshness of citrus, which makes wine important but "drink" at the same time. 

Food Pairings
Beef stew and beef brisket, risotto all'Amarone, Lamb.
Drunk in its mature phase, it is to be combined with seasoned, even spicy cheeses.
