Production area
Valpolicella production area classic. From vineyards with whitish limestone soils located in the municipality of San Pietro in Cariano. 

Varieties
Corvina and Corvinone grapes (70%), Rondinella (30%). 

Description
Of a clear ruby appearance, with even more sparkling reflections, intense scent of red flowers, cherries, raspberries, red currants, and a hint of soft spice mainly cinnamon and coffee: These notes follow through to the palate and are supported by a fine tannic texture, very vibrant and with a nice tactile grip ; for further benefit of drinkability and balance, good acidity and a well-balanced alcoholic heat come into play. 

Food Pairings
Valpolicella finds various combinations, depending on its maturity. When its younger it blends well with the most classic Venetian salami, such as the soppressa, and goes with some first courses based on rice: including tomato-based risotto. When more mature, it works very well with game and more intense tasting meats.
